Amuse-bouche: Beef tartar and uni chive waffle\, Mascarpone whip Opener: Rose and lacto cranberry cured Pacific Rockfish smoked with rosemary\, jicama\, duck egg\, kani dashi\, basil oil\, dill flowers. Second: Walla Walla Onion custard with Pacific crab\, chive flowers\, onion reduction. Entree: Whiskey dry aged ribeye\, coffee demi-glace\, grilled sprigerella\, pickled mustard seed\, caramelized onion puree.
